Water has permeated the village of Sarteano and the surrounding area for over 2,000 years. Starting from Parco delle Piscine, visitors can follow the water course from its source to the valley and observe the life that has sprung up around it over time, including churches, windmills, although only two ruins remain now, and finally the remains of the Roman fish farm of Pescheria Giannini.
